Food Truck Hub Ramping Up
MANKATO — The first big event at the new Food Truck Hub in Old Town drew a lot of visitors and buoyed Dain Fisher's vision for the project's future.
"It exceeded my expectations. I had a lot of people coming up who wanted to bring their trucks down here," said Fisher, who has been developing the hub over the summer.
The hub is in a private parking lot between the Minnesota State University Center for Innovation and Entrepreneurship and Minnesota Iron.
